Description

A quick and easy dessert combining the wholesomeness of dates, creamy peanut butter, and indulgent chocolate.

Ingredients

  • 20-24 Medjool dates
  • 2/3 cup creamy peanut butter
  • 1/2 cup dry roasted peanuts
  • 9 ounces chocolate chips or a chocolate bar
  • 1 teaspoon coconut oil (optional)
  • Coarse sea salt (optional for topping)

Instructions

  1. Line a medium-sized baking sheet with parchment paper.
  2. Take your Medjool dates and carefully slit each one, removing the pits if needed. Arrange the dates on the lined pan in a rectangular shape.
  3. Pour and spread the creamy peanut butter evenly over the layer of dates.
  4. Sprinkle the dry roasted peanuts in an even layer over the peanut butter.
  5. Combine the chocolate chips and coconut oil in a microwave-safe bowl. Microwave in 30-second increments until the chocolate is mostly melted. Keep stirring until it’s nice and smooth.
  6. Pour the melted chocolate evenly over the peanut butter and peanuts. If desired, sprinkle some coarse sea salt on top.
  7. Pop the baking sheet into the freezer for 60-90 minutes or until the bark is completely set.
  8. Remove the bark from the freezer and peel off the parchment paper. Place it on a cutting board and slice it into bite-sized pieces.
  9. Serve and enjoy your delicious creation!
