Description
A delicious balance of rich chocolate cake layered with homemade strawberry jam and smooth strawberry cream cheese frosting.
Ingredients
- 2 cups all-purpose flour
- 2 cups sugar
- 3/4 cup unsweetened cocoa powder
- 1 1/2 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 1 teaspoon salt
- 2 large eggs
- 1 cup whole milk
- 1/2 cup vegetable oil
- 2 teaspoons vanilla extract
- 1 cup boiling water
- 1 cup homemade strawberry jam
- 2 cups fresh strawberries, sliced
- 8 oz cream cheese, softened
- 1/2 cup butter, softened
- 4 cups powdered sugar
- 1/4 cup pureed fresh strawberries
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- Combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt in a large mixing bowl. Mix well to ensure your dry ingredients are evenly distributed.
- Add the eggs, milk, vegetable oil, and vanilla extract to the dry mixture. Beat on medium speed for about 2 minutes until everything is well combined.
- Carefully stir in the boiling water, which will loosen the batter and make it more pourable.
- Pour the batter equally into the prepared pans and bake for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cakes to cool for about 10 minutes before transferring them to wire racks to cool completely.
- Beat the cream cheese and butter together for the frosting until smooth. Gradually add the powdered sugar and pureed strawberries until you reach a creamy consistency.
- Assemble the cakes by layering with homemade strawberry jam and sliced fresh strawberries. Frost the top and sides with the strawberry cream cheese frosting.
- Serve and enjoy!
Notes
For added flavor, consider garnishing with fresh strawberries and mint leaves.
