Description

Delightful Strawberry Cheesecake Crumb Bars with a creamy filling and crispy crumb topping, perfect for any occasion.

Ingredients

  • 2 cups flour
  • 1/2 cup brown sugar
  • 1/2 teaspoon baking powder
  • 1/2 cup melted salted butter
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 block (250g) softened cream cheese
  • 1/4 cup powdered sugar
  • 2 cups chopped strawberries
  • 1 teaspoon lemon juice
  • 1 teaspoon lemon zest
  • 1/4 cup white sugar
  • 1 tablespoon cornstarch

Instructions

  1. Preheat your oven to 375°F (190°C) to get that heat going.
  2. Combine flour, brown sugar, and baking powder in a mixing bowl. Pour in the melted butter, one egg, and vanilla extract. Mix until it resembles a moist crumb mixture.
  3. Mix the softened cream cheese with another teaspoon of vanilla, powdered sugar, and one egg until smooth and creamy in a separate bowl.
  4. Combine the chopped strawberries with lemon juice, lemon zest, white sugar, and cornstarch in another bowl.
  5. Line an 8×8 inch baking pan with parchment paper. Press half of the crumb mixture firmly into the bottom of the pan.
  6. Spread the cheesecake filling evenly over this crumb base.
  7. Layer the strawberry mixture on top, and then sprinkle the remaining crumb mixture over it.
  8. Bake for 40-45 minutes, or until the top turns a beautiful golden brown.
  9. Allow the bars to cool for at least 30 minutes before cutting them into squares.

Notes

Serve warm or cold. Garnish with fresh strawberries or powdered sugar for an eye-catching touch.
