Description

A delightful twist on classic tiramisu, these Frozen Tiramisu Rocks combine creamy mascarpone and coffee-soaked ladyfingers into frozen bites.

Ingredients

  • 1 cup mascarpone cheese
  • 1 cup heavy cream
  • 1 cup brewed coffee (cooled)
  • 1/4 cup sugar
  • 1 teaspoon vanilla extract
  • 1 package ladyfinger cookies
  • 1/2 cup cocoa powder
  • 1 cup dark chocolate (chopped)
  • 1 tablespoon coconut oil (or butter)

Instructions

  1. Combine the mascarpone cheese, heavy cream, sugar, vanilla extract, and half a cup of the cooled coffee in a mixing bowl. Using an electric mixer, beat the mixture until it thickens and forms soft peaks.
  2. Pour the remaining cooled coffee into a shallow dish. Quickly dip each ladyfinger into the coffee, making sure they don’t soak too long.
  3. Layer the dipped ladyfingers at the bottom of muffin tins or silicone molds. Spoon a layer of your mascarpone mixture over the ladyfingers. Repeat the process with another layer of ladyfingers followed by more cream.
  4. Freeze the assembled rochers for at least 240 minutes, or until they are firm.
  5. Melt the dark chocolate and coconut oil together in a small saucepan until smooth.
  6. Dip each frozen rocher into the melted chocolate, ensuring they are coated evenly. Place them on a parchment-lined baking sheet.
  7. Dust the coated rochers with cocoa powder, then return them to the freezer for another 30 minutes to set.

Notes

For best texture, ensure mascarpone is at room temperature before mixing. Do not soak ladyfingers too long in coffee.
