Description

A moist, gluten-free cake bursting with flavor from almonds, pistachios, and zesty oranges.

Ingredients

  • 2 large oranges
  • 1 cup pistachios, shelled
  • 1 cup almonds, ground
  • 1 cup sugar
  • 4 large eggs
  • 1 teaspoon baking powder
  • A pinch of salt
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. Boil the whole oranges in a pot of water for about 30 minutes or until they become soft. Once they’re soft, allow them to cool.
  3. Chop the cooled oranges and blend them into a smooth puree. Set this puree aside.
  4. In a large mixing bowl, combine the orange puree with the ground pistachios, ground almonds, sugar, eggs, baking powder, and salt. Mix until everything is well combined.
  5. Pour the batter into the prepared cake pan, smoothing out the top.
  6. Bake in the preheated oven for 45 to 50 minutes, or until a skewer inserted into the center comes out clean.
  7. Cool the cake in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
  8. Dust with powdered sugar before serving if desired.

Notes

For best results, use fresh oranges and grind your own nuts. Don’t overmix to keep the cake fluffy.
