Description

Delicious, healthy, and easy-to-make Strawberry Oatmeal Bars packed with wholesome ingredients and perfect for snacks or breakfast.

Ingredients

  • 3 cups fresh strawberries, diced
  • 1/4 cup maple syrup
  • 1 tablespoon lemon juice
  • 1-2 tablespoons lemon zest
  • A pinch of sea salt
  • 2 tablespoons tapioca starch
  • 1 1/2 cups rolled oats
  • 1 1/2 cups almond flour
  • 1/2 teaspoon baking soda
  • 1/8 teaspoon sea salt
  • 1/2 cup maple syrup
  • 1/3 cup coconut oil, solid at room temperature
  • 1 teaspoon lemon juice

Instructions

  1. In a small pot over medium heat, combine chopped strawberries, 1/4 cup of maple syrup, 1 tablespoon of lemon juice, lemon zest, and a pinch of sea salt. Simmer for 5 to 10 minutes until the juices are released. Stir in tapioca starch and let simmer for another minute before removing from heat.
  2. Preheat your oven to 375 degrees Fahrenheit. Line an 8×8 baking dish with parchment paper.
  3. In a large bowl, whisk together rolled oats, almond flour, baking soda, and sea salt. Add the remaining maple syrup, coconut oil, and lemon juice. Mix everything thoroughly until well combined.
  4. Set aside 1/2 to 3/4 cup of the oatmeal mixture for topping. Press the remaining mixture into your lined baking dish evenly.
  5. Spread the prepared strawberry filling over the oatmeal base and sprinkle the reserved oatmeal mixture on top.
  6. Bake for 20 to 25 minutes or until the edges are golden brown. Allow the bars to cool completely before slicing.
