Description

A delightful dessert combining the creamy richness of cheesecake with the chewy texture of mochi and fresh strawberries.

Ingredients

  • 1 cup glutinous rice flour
  • 1/2 cup water
  • 1/4 cup sugar
  • 1 cup crushed strawberries
  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 tsp vanilla extract
  • Cornstarch for dusting

Instructions

  1. Combine the glutinous rice flour, water, and sugar in a bowl, stirring until smooth.
  2. Pour the mixture into a microwave-safe bowl and heat for 1-2 minutes, stirring every 30 seconds until thickened.
  3. Dust a clean surface with cornstarch and pour the mochi mixture onto it, letting it cool for a few minutes.
  4. Dust your hands with cornstarch, rolling the mixture into small 1-inch balls.
  5. Beat together the cream cheese, powdered sugar, vanilla, and crushed strawberries until smooth.
  6. Flatten a piece of mochi in your hand, add cheesecake mixture in the center, and fold the edges to seal.
  7. Repeat until all the mochi are filled.
  8. Chill the mochi in the refrigerator before serving.

Notes

Use fresh strawberries for the best flavor and consider experimenting with different fruits in the filling.
