  • 1 tsp Baking Soda
  • 1/2 tsp Baking Powder
  • 1/4 tsp Salt
  • 110 ml Boiling Water (or brewed coffee)
  • 450 g Fresh Strawberries (washed & diced into small cubes)
  • 80 g Sugar (cane or castor)
  • 8 g Corn Starch
  • 15 ml Water (mixed with cornstarch)
  • 42 g Fresh Strawberries (diced into small cubes)
  • 180 g Butter (room temperature)
  • 200 g Powdered Sugar (or icing sugar)
  • 220 g Cream Cheese (soft at room temperature)
  • 2 tsp Vanilla Extract
  • 80 g Strawberry Filling (prepared and cooled)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. Whisk together the milk and apple cider vinegar in a small bowl and let it sit for about 5 minutes.
  3. Combine yogurt, cane sugar, brown sugar, and vanilla extract in a large mixing bowl. Mix until smooth.
  4. Add the oil and curdled milk mixture, then mix well.
  5. Sift together the flour, cocoa powder, baking soda, baking powder, and salt in another bowl.
  6. Gradually add the dry ingredients to the wet ingredients. Mix until just combined.
  7. Stir in the boiling water or brewed coffee.
  8. Divide the batter evenly into the prepared pans and bake for 30 to 35 minutes.
  9. Prepare the strawberry filling by cooking diced strawberries with sugar in a saucepan over medium heat for about 5 minutes.
  10. Mix cornstarch with water, add it to the saucepan, and stir until thickened. Let cool.
  11. Beat the butter until creamy for the frosting, then gradually add powdered sugar, cream cheese, and vanilla extract.
  12. Fold in the cooled strawberry filling.
  13. Assemble the cake by placing one layer on a serving plate, spreading half the strawberry filling, adding frosting, and layering the second cake on top.
  14. Top with remaining frosting and garnish with additional diced strawberries if desired.
