Description
A decadent treat that combines tart cranberries with rich dark chocolate, perfect for holiday celebrations and gifting.
Ingredients
- 2 cups thick cranberry sauce (homemade or store-bought)
- 2 tablespoons powdered sugar
- 1 tablespoon cornstarch
- 1 teaspoon vanilla extract
- 12 oz dark chocolate (70% cocoa), chopped
- 2 tablespoons coconut oil or shortening
- Fresh cranberries for garnish (optional)
Instructions
- Prepare cranberry filling: In a medium saucepan, combine the cranberry sauce, powdered sugar, cornstarch, and vanilla. Cook over medium heat, stirring constantly, for about 5-7 minutes until the mixture thickens significantly. Allow it to cool completely before refrigerating for 1 hour until firm.
- Shape the centers: Once chilled, scoop the cranberry mixture into small portions and roll them into 1-inch balls between your palms. Place these balls on a parchment-lined baking sheet and freeze for about 30 minutes until they are very firm.
- Melt chocolate: In a double boiler over simmering water, melt the chopped dark chocolate along with the coconut oil, stirring until smooth and glossy. Alternatively, you can microwave the chocolate in 30-second intervals, stirring between each, until fully melted.
- Dip the centers: Working quickly, dip each frozen cranberry ball into the melted chocolate using a fork. Ensure excess chocolate drips off before placing them on a clean parchment-lined sheet.
- Add garnish: While the chocolate is still wet, you can top each treat with a fresh cranberry if desired. Then refrigerate for 1 hour until the chocolate is completely set.
Notes
Use high-quality dark chocolate for the best flavor. Consider adding spices or citrus for variations.
