Description

Delightful bars combining creamy cheesecake, juicy blueberries, and a crunchy crumble topping.

Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/3 cup sugar
  • 1/2 cup melted butter
  • 2 cups softened cream cheese
  • 1 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups fresh blueberries
  • 1/2 cup rolled oats
  • 1/2 cup flour
  • 1/2 cup brown sugar
  • 1/4 cup softened butter

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×9-inch baking dish.
  2. Combine the graham cracker crumbs, 1/3 cup sugar, and melted butter until the mixture resembles wet sand. Press this mixture into the bottom of the prepared baking dish.
  3. Beat together the cream cheese and 1 cup sugar until smooth. Add the eggs and vanilla extract, mixing until fully incorporated.
  4. Pour the cream cheese mixture over the crust and spread it evenly.
  5. Scatter the fresh blueberries over the cheesecake layer.
  6. Mix the oats, flour, brown sugar, and softened butter until crumbly. Sprinkle this mixture over the blueberries.
  7. Bake for 45-50 minutes or until the top is golden brown and the center is set.
  8. Allow the bars to cool before slicing into squares.
